The Waiter/Waitress is responsible for serving food and beverage to guests during an assigned shift in a courteous, professional manner according to proper service standards as set by Kempinski.

Key Responsibilities:

  • Accurately records, pre-checks and picks-up all food and beverage orders.
  • Serves guests their food and beverage in prompt, courteous manner as per the standard sequence of service.
  • Sets tables as per Outlet standard prior to guests’ arrival.
  • Up-sells or promotes all specials advertised in the outlet as well promoting slow moving items.
  • Has an understanding and knowledge of all food and beverage items in the menu and the ability to recommend Food & Beverage combinations and up sell alternatives.
  • Knowledgeable of all ingredients and prices of the food and beverage listed on the menu.

Front Office Manager – (in English)

Lead and manage all sections of the Front Office Department in order to ensure the highest standards of service in accordance with the policies, procedures and Kempinski Standards. Responsible for up selling rooms to maximize the room revenue, the arrival and departure experience of the guests.

Key Responsibilities:

  • Revenues, Expenses and Profit is closely monitored and budgeted figures (over)-achieved.
  • Direct front office operation such as checking in, checking out and providing guest assistance whilst ensuring compliance with all front office policies, procedures, standards and focus on guest’s satisfaction and needs.
  • Participate in the development, implementation and review of the policies, procedures, practices and standards.
  • Select, train, develop, schedules and manage the performance of direct subordinates to ensure the efficient running of front office operations.
  • Maximize hotel revenue by controlling room inventory, group blocking, packages, up selling.
  • Maintain high visibility during peak period in order to ensure smooth running of operations, promote good public relations, take corrective actions and handle customers’ complaints to ensure their satisfaction.
  • Greet VIP guests upon their arrival and escort them to their room. Establish good rapport and offer assistance for the duration of their stay.
  • Coordinate front office duties with various departments such as Executive Office, Housekeeping, Sales and Marketing, Engineering and Security to ensure that all guests are given friendly and caring service from their arrival until their departure according to Kempinski Standards in a safe and secure environment.
  • Identify training needs, plans training activities and oversee their implementation for all front office sections.  Follows up to ensure compliance and efficiency of training activities.
  • Participate in the preparation of the annual budget and manning guide and manage within  budgetary guidelines.
  • Keep abreast of all emergency procedures, hotel promotions, product knowledge, VIP arrivals, upcoming events and brief direct subordinates accordingly so that all front office staff are able to answer guest requests and questions.
  • Accomplish a set of administrative duties such as leading and attending meeting, writing reports and memos and other specific duties related to the job function.

OVERALL OBJECTIVES

The job of Executive Chef is executed satisfactorily when:

  • Recipes are maintained up-dated and accurate costing of all dishes prepared and sold in the Food and Beverage operation. New dishes and products are developed.
  • Comprehensive product knowledge is fostered in regards to ingredients, equipment, suppliers, markets and current trends and appropriate adjustments to kitchen operations are made accordingly.
  • Excellent culinary technical skills are displayed and maintained.
  • Menus offering our guests value for money in accordance with corporate guidelines are created in collaboration with the Food & Beverage Director / Manager.
  • Effective and positive employee working relationships are established and maintained (ESS score 75% and above).
  • All HACCP guidelines are achieved and maintained.

The Executive Chef fulfils their role as a Talent Development Ambassador when:

  • They actively support and implement Talent Development initiatives as a part of their daily activities.
  • They identify Training talents in their department and throughout the hotels as per below definition* and actively support their career development.
  • They support and initiate transfer, cross exposure and task force assignments for their team.
  • They personally conduct TTTTs with their team on a regular basis and take personal interest for their talents’ development plans.
  • They recruit and select potential talent according to the Company’s current and future hotel, regional and worldwide needs including conducting interviews for positions in their department and their region.

MAIN RESPONSIBILITIES

  • Manage all functions of the Food Production and Stewarding operations to achieve the optimum departmental profit.
  • Plan and organize with the Director of Food and Beverage successful Food and Beverage activities in the hotel and abroad.
  • Keep an up-dated hotel policies and procedures file.
  • Work with the People Services Manager to ensure the departmental performance of staff is productive.
  • Plan for future staffing needs.
  • Ensure training needs analysis of Kitchen staff is carried out and training programmes are designed and implemented to meet needs (in collaboration with the Training Manager where applicable).
  • Conduct probation and formal performance appraisal in line with company guidelines.
  • Maintain up to date staff records and approves leave requests.
  • Coach, counsel and discipline staff, providing constructive feedback to enhance performance.
  • Participate in the preparation of the hotel’s revenue plan and marketing programmes.
  • Determine with the Finance Director the minimum and maximum stocks of all food, material and equipment.
